Market Basket Replication

Previously I did a post on Donut Muffins. I had been trying to replicate the muffins at Market Basket in Camden. While the donut muffins were similar it was just a little bit off. I was browsing through Food Gawker and saw a recipe for French Breakfast Muffins and was intrigued. I checked out the recipe and decided I would try to see if it was what I was looking for.

Yes. Yes it was.

Here is my warning. If you are trying to lose weight. Look away now. These will not aid in your weight loss. They will send you into a diet nose dive. Butter. Sugar. Butter. You will taste one fresh out of the oven and the muffin will honestly melt on your tongue. Then you will have another. And another. Then the next morning you will have more. I promise you.

Perfect Donut Muffins

Yield: 10 muffins

1/3 c. butter, melted and cooled
1/2 c. sugar
1 egg, room temp
1 1/2 c. flour
1 1/2 tsp. baking powder
1/2 tsp. salt
1/4 tsp. nutmeg
1/2 c. milk

Topping
1/2 c. butter, melted
1/2 c. sugar
1 tsp. cinnamon

Preheat oven to 350F. In a medium-large bowl, sift together all dry ingredients. Add wet ingredients and stir until combined, but still a bit lumpy. Don't overmix. Scoop batter into muffin tins that have sprayed with cooking spray. Bake for 20-25 muffins, or until they just start to turn a bit golden at the edges.

For the topping, mix sugar and cinnamon in a small bowl. Place melted butter in another small bowl. Dip the warm muffins in melted butter, then in cinnamon sugar.

When I saw your recipe for donut muffins, I couldn't believe it! My mother is the bread baker for the Market Basket in Rockport and their donut muffins are to die for. I have not made them yet, but yours look just as good.
